Meatloaf with Veggies

Mix Meatloaf with tomato sauce. Plate with mashed potatoes and sautéed snap peas and pearl onions.

Meatloaf Tabouleh Salad

Combine cooked couscous (dressed with Dijon mustard and white wine vinegar), diced Meatloaf , chopped flat leaf parsley, sautéed mushroom slices (fresh or canned), garnished with chopped green onions.

Southwest Meatloaf Pita

Roughly pull apart Meatloaf into chunks. In a frying pan, add sliced onions, chopped garlic and sliced yellow peppers. Add the meatloaf chunks and heat through. Sprinkle a little smoked paprika and chopped cilantro on top. Spoon into warmed half pita shells and drizzle with chipotle mayo and garnish with salsa. Serve with a tomato salad.
